Cranberry Glazed Beef Tenderloin

This recipe prepares a beef tenderloin roast seasoned with warm spices like nutmeg, cloves, and cinnamon, then seared before being roasted with a tangy and sweet cranberry glaze. The glaze is made by simmering fresh cranberries with orange juice, brown sugar, and cinnamon until thickened. The result is a tender roast with a flavorful crust and a bright, slightly sweet finish from the cranberry sauce. This dish offers a balance of savory and fruity notes, making it suitable for special dinners.

Description

The Cranberry Glazed Beef Tenderloin features a trimmed and tied beef tenderloin rubbed with a spice blend including kosher salt, black pepper, nutmeg, cloves, and cinnamon. After searing in vegetable oil for a uniform brown crust, the beef is basted with a homemade cranberry glaze and roasted in the oven. The glaze, made by simmering fresh cranberries with orange juice, light brown sugar, a cinnamon stick, and salt, reduces to a thick coating that complements the rich flavor of the beef. The spices highlight the roast’s warmth, while the cranberry glaze provides a balanced sweetness and acidity.

This beef tenderloin can be served sliced with additional cranberry glaze, making it a good choice for festive meals or elegant dinners. The glaze’s combination of fresh cranberry and citrus adds a seasonal touch that pairs well with roasted vegetables or simple sides.

The recipe suggests basting the roast twice during cooking to build flavor and moisture. Using fresh cranberries for the glaze ensures it thickens properly and has a fresh taste. Monitoring the glaze consistency is important to achieve the right coating texture.

Ingredients

Servings

Beef Tenderloin:

  • 2-3 pound beef tenderloin , trimmed and tied*
  • 1 1/2 teaspoons kosher salt coarse
  • 1 teaspoon black pepper ground
  • 1 teaspoon ground nutmeg
  • 1 teaspoon cloves ground
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon vegetable oil

Cranberry Glaze:

  • 2 cups cranberries fresh
  • 1 cup orange juice
  • 1 cup light brown sugar
  • 1 cinnamon stick
  • 1/4 teaspoon kosher salt coarse

Instructions

Cranberry Glaze:

  1. In a medium saucepan, combine the cranberries, orange juice, brown sugar, cinnamon stick and salt, stirring to combine. Heat over medium-low heat until it simmers.
  2. Continue to simmer and stir until the cranberries pop and the mixture is the consistency of a glaze and can coat the back of a spoon, approximately 8-9 minutes. Remove the heat and set aside.

Beef Tenderloin:

  1. Preheat the oven to 350°F.
  2. Pat the beef tenderloin dry with a paper towel. Set aside.
  3. In a small bowl, combine the salt, pepper, nutmeg, cloves and cinnamon.
  4. Rub the spice mixture onto evenly all over the tenderloin roast.
  5. Heat a large cast iron skillet over medium-high heat. Add the vegetable oil and then sear the beef tenderloin on all sides until uniformly brown. Approximately 6-7 minutes. Turn off the heat.
  6. Baste or spoon a small amount of the cranberry glaze onto the beef tenderloin. Place into the oven for 10 minutes, remove and baste or spoon glaze again.
  7. Roast for a total of 20 minutes for a 2-pound roast and 30 minutes for a 3-pound roast for medium rare, or until a digital instant thermometer reaches 145°F. Remove and allow to rest before slicing into single serving pieces.
  8. Spoon the remaining cranberry glaze over the slices.
