Cranberry Orange Sauce

Cranberry Orange Sauce combines tart cranberries with bright orange juice, zest, and a pinch of salt, simmered until the berries burst and the mixture thickens. The sauce can be adjusted for texture by adding some berries later to keep whole ones intact, resulting in a vibrant condiment that complements a variety of dishes.

Description

This Cranberry Orange Sauce features fresh or frozen cranberries cooked with granulated sugar, fresh-squeezed orange juice, and orange zest. A pinch of salt balances the flavors. The cranberries simmer until they burst, releasing their juices and thickening the sauce. Adding some cranberries later in the cooking process keeps portions whole for a textural contrast. The finished sauce has a lively balance of sweet and tart with bright citrus notes.

The sauce is suited for serving alongside poultry or holiday fare, adding a refreshing contrast to richer dishes. It can be made ahead and refrigerated until use.

Using fresh-squeezed orange juice and zest enhances brightness, but frozen cranberries perform well as a substitute. Texture can be tailored by stirring in some whole berries after the initial cooking.

Ingredients

Servings
  • 3/4 cup granulated sugar
  • 1 cup orange juice fresh squeezed is best
  • 12 ounces cranberries frozen will also work, fresh
  • 2 teaspoons orange zest plus more for garnish
  • salt pinch

Instructions

  1. Place the sugar and orange juice in a medium pan over medium high heat. Bring to a simmer.
  2. Add the cranberries, orange zest and salt, then simmer for 8-10 minutes or until cranberries have burst. If you prefer a chunkier sauce, add 3/4 of the berries, then after the cranberries have burst, stir the remaining 1/4 berries in.
  3. Let the cranberry orange sauce sit at room temperature until cool, then transfer to a container and store in the fridge until you're ready to serve it.

Notes

  • Fresh cranberries provide optimal flavor, although frozen cranberries can be used effectively.
  • Adding some cranberries after initial cooking preserves whole berries in the sauce for varied texture.
  • Freshly squeezed orange juice and zest enhance the citrus brightness of the sauce.
