Cranberry, Pecan, Goat Cheese, Sweet Potato Bites

These sweet potato bites are roasted thin rounds topped with whipped goat cheese flavored with rosemary, then garnished with toasted pecans, dried cranberries, and a honey drizzle. The combination offers sweet, creamy, nutty, and aromatic layers that make elegant, flavorful appetizers or snacks.

Description

The recipe begins with thinly sliced sweet potatoes tossed in olive oil, salt, and pepper, then roasted until tender and lightly crisped. While the potatoes bake, goat cheese is whipped smooth with milk and finely chopped fresh rosemary, along with seasoning, to create a creamy, herbaceous topping.

Each cooled sweet potato slice gets a dollop of the whipped goat cheese mixture, then is topped with chopped toasted pecans and dried cranberries for contrasting textures and sweet-tart flavor. A final honey drizzle adds sweetness that complements the savory herbs and earthy sweet potatoes.

This dish functions well as a warm or room-temperature bite perfect for gatherings or light snacks. The goat cheese topping can be prepared in advance and brought to room temperature before serving. Sweet potatoes are used unpeeled after thorough washing to retain nutrients and add texture.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 1 sweet potato scrubbed clean and sliced into 1/4 inch rounds, large or 2 small
  • 4 ounces goat cheese room temperature
  • 2 tablespoons milk I used 1%
  • 1 teaspoon rosemary finely chopped fresh
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste
  • 1/4 cup pecans toasted, chopped
  • 1/2 cup dried cranberries
  • honey for drizzling

Instructions

  1. Preheat oven to 425° F. Spray a rimmed baking sheet with cooking oil.
  2. In a large bowl toss together the sweet potato slices, olive oil, salt and pepper. Lay the slices out on the baking sheet in a single layer, spray the tops with more cooking oil if necessary.
  3. Place on the middle rack in the oven and bake for 10 minutes then flip them over and bake for another 8-12 minutes or until tender.
  4. While the sweet potatoes bake, use a stand or hand mixer with the whisk attachment or handheld mixer to whip the goat cheese, milk, rosemary, salt and pepper until smooth and fluffy.
  5. Spoon approximately 1/2 teaspoon of the goat cheese mixture onto each sweet potato round. Top the goat cheese with a few chopped pecans and cranberries, then drizzle with honey. Serve warm or at room temperature.

Notes

  • Whip goat cheese mixture a day ahead and let it reach room temperature before serving.
  • No need to peel sweet potatoes; clean them thoroughly instead.
