Cranberry Sauce

This Cranberry Sauce features fresh cranberries simmered with sugar, water, orange juice, and orange liqueur for a tart and slightly sweet condiment. The addition of cinnamon, cloves, orange zest, and vanilla extract deepens the flavor with warm spices and citrus aroma. It is cooked until cranberries burst and thickens, then chilled before serving.

Description

The recipe starts by boiling fresh cranberries with granulated sugar, water, orange juice, and orange liqueur until the berries burst and the mixture thickens. Adding a cinnamon stick and cloves during simmering infuses subtle warm spice notes. Orange zest and vanilla extract are stirred in near the end to provide bright citrus fragrance and vanilla warmth.

This sauce strikes a balance between tartness from cranberries and citrus with sweetness from sugar and liqueur, accented by the spices. It is allowed to cool to room temperature and then refrigerated to develop flavor and thicken further before serving.

The sauce pairs well with roasted meats and can be adjusted for alcohol-free consumption by omitting orange liqueur. If too thick, additional water can be stirred in after cooking to achieve desired consistency. It keeps in the refrigerator for up to five days.

  • 24 ounces cranberries fresh
  • 1 1/2 cups granulated sugar
  • 1 1/2 cup water plus more if needed
  • 1/4 cup orange juice
  • 1/4 cup orange liqueur
  • 1 tick cinnamon
  • 3 whole cloves
  • 2 tablespoons orange zest
  • 2 teaspoons vanilla extract

Instructions

  1. In a sauce pot over high heat, add the cranberries, sugar, water, orange juice, and orange liqueur and bring to a boil.
  2. Reduce the heat to medium, add the cinnamon stick and cloves and allow to cook, stirring occassionally until the cranberries have burst, about 10 minutes.
  3. Reduce the heat to a simmer, add the vanilla extract and orange zest stirring to combine, and cook for an additional 5 min, then remove from the heat and allow to come to room temperature.
  4. Once cooled to room temperature, chill in the refrigerator until you're ready to use.

Notes

  • For thinner sauce, add extra water after cooking as needed.
  • Omit orange liqueur to make this Cranberry Sauce alcohol-free.
  • Store in the refrigerator for up to five days in an airtight container.
