Cranberry Sauce
Description
To prepare Cranberry Sauce, granulated and brown sugar are dissolved in orange juice over medium heat, creating a sweet and citrusy base. Fresh cranberries are then added and cooked for up to 20 minutes, during which the cranberries pop naturally, releasing their juices and thickening the mixture.
Once removed from heat, the sauce is cooled to set further, developing a consistency suitable as an accompaniment to roasted meats or holiday dishes. The dual sugars contribute depth of sweetness and molasses notes, complementing the bright cranberries and citrus.
Ingredients
- 12 ounces cranberries
- ½ cup granulated sugar 100g
- ½ cup brown sugar 100g
- ¾ cup orange juice
Instructions
- In a medium saucepan, over medium heat, dissolve the granulated sugar and brown sugar in the orange juice.
- Add the cranberries to the sugar mixture and cook for up to 20 minutes, stirring occasionally, or when the cranberries start to pop.
- Remove the cranberry mixture from heat and pour it into a bowl to cool and thicken (about an hour).
