Description

This cranberry sauce recipe blends fresh cranberries and finely diced apples cooked together in a syrup made from apple cider, white or sparkling wine, and brown sugar. Warm spices including cinnamon stick and whole cloves infuse the sauce with cozy autumnal flavors. The mixture is boiled and simmered until the cranberries burst and the sauce thickens slightly, creating a balance of tart and sweet notes enhanced by the natural acidity of the cider and wine.

The small diced Honeycrisp apples maintain some texture within the sauce, adding a mild sweetness and complementing the cranberry's tartness. After cooking, the sauce is cooled and refrigerated to allow flavors to meld, making it a flavorful accompaniment to poultry, pork, or cheese dishes.

For optional addition, apple brandy such as Calvados adds a subtle depth and warmth when stirred in near the end of cooking. The sauce can be prepared ahead of time and served chilled or at room temperature.

  • 12 ounces cranberries fresh
  • 1 cup brown sugar
  • ½ cup white wine or sparkling wine
  • ¾ cup apple cider
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 cup apple I used Honeycrisp, finely diced
  • 2 tablespoons calvados optional, or other apple brandy

Instructions

  1. In a large saucepan, over medium high heat add the apple cider, wine, brown sugar, cinnamon stick and cloves.  Bring to a boil and simmer for 3-5 minutes until the sugar dissolves and the mixture becomes syrupy.
  2. Remove the whole cloves from the syrup and discard.
  3. Stir in the cranberries and chopped apples. Bring to a boil, stirring occasionally for 5-7 minutes or until the cranberries have popped. Transfer the pot off the heat. Remove the cinnamon stick and discard.
  4. Stir in the Calvados or brandy, if using and simmer for one minute. Cool to room temperature, cover with plastic wrap and refrigerate several hours or overnight. Serve.
