Cranberry Vanilla Energy Bites
Description
To prepare Cranberry Vanilla Energy Bites, raw nuts are finely ground without turning into butter, preserving some texture. Dried cranberries and Medjool dates add natural sweetness and chewiness, while vanilla extract and a pinch of salt enhance flavor. Small amounts of water may be added to help the mixture come together. The mixture is shaped into roughly 20 small balls, each about 2 teaspoons in size, making them easy to serve and store.
These bites are kept in airtight containers in the refrigerator or freezer to maintain freshness and firmness. Their no-bake nature and simple ingredient profile make them practical homemade snack options.
Ingredients
- 1/2 cup cashew nuts raw
- 1/2 cup almond raw
- 1/2 cup dried cranberries unsweetened if you want them to be paleo
- 1/2 cup Medjool dates about 6-7 dates, chopped
- 1/2 teaspoon vanilla extract
- Pinch salt
Instructions
- In a high speed blender or food processor add the cashews and almonds and pulse until they are finely ground, careful not to turn them into nut butter.
- Add in the remaining ingredients and blend or pulse until everything starts to come together. Scrape down the sides several times and add up to 2 tablespoons of water. You may need to remove the mixture and place it into a bowl and mash it together with your hands or a spatula.
- Form into approximately 20 balls about 2 teaspoons each. Store the energy bites in an airtight container in the refrigerator or freezer.
