  • 2 carrot chopped, large
  • 2 tbsp neutral cooking oil avocado or olive, generic cooking oil
  • 6 cups water
  • 2 cups great northern beans dry
  • 2 bay leaf
  • 2 lbs ham bone-in
  • 1 tbsp salt adjust to taste
  • 1 tbsp black pepper adjust to taste, ground
  • 3 tbsp dill

Instructions

  1. Preheat a large pot with oil. Add onion and carrots to the pot. Cook until lightly golden.
  2. Rinse bean under cold water. Add beans, ham, and bay leaves to the pot.
  3. Add water to the pot. Bring it to a boil and reduce heat to medium low. Allow it to simmer for about 90 minutes or until beans are fully cooked.
  4. Remove ham from the soup. Cut off any meat from the bone and cut it into bite size pieces. Discard the bone.
  5. Return ham to the soup. Season with salt and pepper. Remove from heat, add dill. Enjoy.
