Crazy Good Pumpkin Seeds

Crazy Good Pumpkin Seeds are roasted raw pumpkin seeds seasoned with olive oil and sea salt, with an optional chili powder and garlic-spice blend. Thoroughly cleaned and dried seeds become crisp and golden after roasting at 325°F for about 25-30 minutes, stirred halfway through. The recipe offers a simple and flavorful way to enjoy pumpkin seeds as a crunchy snack with subtle heat and savory notes when the seasoning is used.

Description

This recipe starts by rinsing raw pumpkin seeds free of pulp and drying them thoroughly. Coated in olive oil and sea salt, and optionally a chili, paprika, garlic powder, and black pepper mix, the seeds are spread in a single layer on a baking sheet. Roasting at 325°F provides a gentle heat that crisps the seeds evenly without burning. Stirring halfway ensures uniform browning. When done, the seeds attain a golden color and a crunchy texture.

The flavor is lightly salty and nutty from the roasting, with optional spices adding warmth and a mild smoky heat. The preparation highlights the contrast between the naturally mild pumpkin seed and the added seasonings, making the seeds a focused-snack option.

They can be eaten as a snack, sprinkled on salads, or added to trail mixes. The recipe also includes instructions for air frying as an alternative roasting method, expanding versatility for different kitchen equipment and preferences.

  • 3 cups pumpkin seeds raw
  • 1 tablespoon olive oil
  • ½-1 teaspoon salt sea salt

Optional Seasoning

  • 1 tablespoon chili powder
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt

Instructions

  1. Remove the pumpkin seeds from the pumpkin, discarding as much pulp as possible. Place 3 cups raw pumpkin seeds in a medium bowl and rinse thoroughly to remove any remaining pulp. Strain in a colander.
  2. Pat the seeds very dry with a paper towel.
  3. Preheat the oven to 325 degrees Fahrenheit. Spray a baking sheet lightly with pan spray and set aside.
  4. Add the pumpkin seeds to the prepared baking sheet. Add 1 tablespoon olive oil and ½-1 teaspoon sea salt (omit the salt if you are using the seasoning) and stir to coat.
  5. If you want to use the seasoning, combine the 1 tablespoon chili powder, ½ teaspoon paprika, ¼ teaspoon garlic powder, ½ teaspoon salt, and ¼ teaspoon pepper. Toss with the seeds and oil to coat.
  6. Spread the seeds out evenly on the pan and roast for 25-30 minutes, stirring halfway through. The seeds should be golden brown. Let them cool before transferring to a bowl to enjoy.

Notes

  • To air fry, preheat to 360°F and roast seeds in the basket for 20-25 minutes, shaking every 5 minutes until golden brown.
  • Remove as much pumpkin pulp as possible before rinsing to avoid clumping.
  • Pat seeds very dry to encourage even roasting and crispness.
