  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese softened
  • ½ cup Bacon crumbled, cooked
  • 1 cup cheddar cheese shredded
  • 1 cup Doritos chips nacho cheese flavor, crushed
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika optional, for extra flavor

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a bowl, mix together the softened cream cheese, crumbled bacon, and shredded cheddar cheese until well combined.
  3. Using a sharp knife, create a pocket in each chicken breast by cutting horizontally through the center, but not all the way through.
  4. Stuff each chicken breast with the cream cheese and bacon mixture.
  5. In a shallow dish, crush the Doritos chips into small crumbs and season with garlic powder, onion powder, black pepper, and paprika.
  6. Coat each stuffed chicken breast with the Doritos crumbs, pressing gently to ensure the coating sticks.
  7. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side, just to get a golden crust.
  8. Transfer the seared chicken breasts to the prepared baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving.

Notes

  • You can substitute the Doritos with any other chips you like, such as tortilla chips or even pretzels, for a different flavor.
  • For a lighter version, use reduced-fat cream cheese and skip the searing step.
  • You can add some diced jalapeños to the cream cheese mixture for a spicy kick.
  • If you prefer a crispier crust, broil the chicken for the last 2-3 minutes of baking.
