Cream Cheese Mashed Potatoes are made by peeling and chunking potatoes, then boiling them with garlic cloves until fork-tender. After draining, the potatoes and cloves return to the warm pot. Ingredients

  • 3 pounds potato russet or Yukon gold
  • 3 cloves garlic
  • 8 ounces cream cheese softened and cut into cubes
  • cup butter melted, salted
  • ½ cup milk or cream (or more as needed)
  • salt to taste
  • black pepper to taste

Instructions

  1. Peel potatoes and cut into 1" chunks. Place in a large pot of cold salted water with the garlic cloves.
  2. Bring potatoes to a boil and cook uncovered 15-20 minutes or until fork-tender.
  3. Drain well and place potatoes & garlic cloves back into the warmed pot.
  4. Warm milk in the microwave for 30 seconds at a time until warm.
  5. Add cream cheese and butter to the potatoes and using a masher, mash potatoes.
  6. Add warmed milk a little bit at a time while continuing to mash until smooth and creamy.
  7. Season with salt and pepper. Serve hot.

Notes

  • Leftover mashed potatoes can be stored in an airtight container in the refrigerator for up to 5 days.
