Cream Cheese Mashed Potatoes
Description
This recipe for Cream Cheese Mashed Potatoes uses peeled russet potatoes quartered and boiled in salted water until soft. After draining, the potatoes are returned to the pot where melted butter infused with garlic, cubed cream cheese, and milk are added. Mashing these together creates a creamy, velvety texture enhanced by the mild tang of cream cheese and the gentle flavor of garlic.
The seasoning includes salt and black pepper to taste, with fresh parsley or sliced chives scattered on top for a fresh herbal note and color contrast. Additional butter can be added as a garnish for richness. The mashed potatoes complement a range of main dishes and are satisfying in various meal settings.
For best texture, use a potato masher rather than a food processor to avoid gummy consistency. Cutting potatoes into evenly sized pieces ensures uniform cooking. Pressing through a ricer can provide even smoother results. Timing when to add ingredients and careful mashing help maintain the creamy but slightly fluffy texture desired in this side dish.
Ingredients
- 4 lbs russet potato peeled and cut into quarters
- 1/4 cup butter
- 1 1/2 teaspoons garlic minced
- 8 ounces cream cheese cut into cubes
- 1 cup milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons parsley chopped or sliced chives
- butter optional, additional for garnish
Instructions
- Bring a large pot of salted water to a boil.
- Add the potatoes and cook for 20 minutes or until tender.
- Drain the potatoes and add them back to the pot.
- Place the butter and garlic in a small bowl. Microwave in 30 second increments until butter is melted.
- Add the melted garlic butter, cream cheese and milk to the pot of potatoes.
- Mash the potatoes until they're smooth and creamy. Stir in the salt and pepper. Sprinkle with parsley or chives, then serve. Garnish with additional butter if desired.
Notes
- Use a potato masher for the softest texture; avoid food processors as they can make potatoes gummy.
- Cut potatoes into similar sizes to cook evenly.
- For very smooth potatoes, press cooked potatoes through a ricer before adding other ingredients.
