Cream Cheese Sugar Cookies
Description
This cookie recipe blends full-fat cream cheese and salted butter until smooth, then incorporates sugar, egg, vanilla, and almond extracts. Flour and baking powder are added to form a soft dough which is chilled for an hour to firm up. Rolling the dough to about 1/4 inch thickness ensures even baking and maintaining the shape of cut cookies. Baking at 375ºF for 8-10 minutes results in cookies that hold shape with a soft center and gently crisp edges.
The accompanying frosting balances powdered sugar, softened butter, almond extract, and milk to a spreadable consistency that works well for decorating. The almond extract enhances the sweet, rich flavors of the cookies and frosting.
Chilling the dough is essential to prevent excessive spreading during baking. Adding salt to the dough is recommended if unsalted butter is used to achieve proper flavor balance. Proper thickness and baking time are key for soft but well-formed cookies.
Ingredients
Dough
- 1 cup butter room temperature, 8 ounces, salted
- 8 ounces cream cheese room temperature, full fat
- 1 1/2 cup granulated sugar 300 grams
- 1 large egg
- 1 teaspoon vanilla extract 5 grams
- 1/2 teaspoon almond extract 2 grams
- 3 1/2 cups all-purpose flour 455 grams
- 1 teaspoon baking powder 4 grams
Frosting
- 2 cups powdered sugar 260 grams
- 2 tablespoons butter 28 grams, soft
- 1/4 teaspoon almond extract
- milk to desired consistency
Instructions
- In the bowl of a stand mixer, blend butter and cream cheese with the paddle attachment on low speed for 2-3 minutes until smooth and creamy. 1 cup salted butter, 8 ounces full fat cream cheese
- Add sugar, egg and extracts. Mix again for 1-2 minutes. Scrape sides of the bowl as needed. 1 1/2 cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract, 1/2 teaspoon almond extract
- Mix in remaining dry ingredients and blend into the creamed mixture, scraping the sides of the bowl as needed. 3 1/2 cups all-purpose flour, 1 teaspoon baking powder
- Remove the soft dough and flatten the dough into a disk. Wrap in plastic wrap and chill the dough in the fridge for one hour.
- Preheat the oven to 375ºF.
- Roll out sugar cookie dough on floured surface until 1/4 inches thick (a must!) . Cut with desired cookie cutter shape, place on a parchment paper or silicone mat lined baking sheet and bake for 8-10 minutes.
- Let cookies cool on the cookie sheets for 5 minutes, then move to a wire rack to cool completely.
- Mix all the frosting ingredients in a small bowl and add some food coloring if desired. 2 cups powdered sugar, 2 tablespoons soft butter, 1/4 teaspoon almond extract
- Frost sugar cookies when they are fully cooled. Allow the frosting to set before storing in an airtight container.
Notes
- Chilling the dough for at least one hour helps cookies maintain shape during baking.
- If using unsalted butter, add 1/2 teaspoon salt to the dry ingredients to balance flavors.
- Cut cookies to about 1/4 inch thickness for optimal texture and structure.
