Description

This recipe mixes softened cream cheese and sour cream with ranch dressing mix to create a tangy and creamy base. Shredded cheddar cheese, drained diced green chiles, chopped green onions, and ripe chopped olives are folded in for added texture and flavor. The mixture is spread evenly over large flour tortillas, which are then rolled tightly and chilled to set the filling.

Chilling firm the roll ups so they slice cleanly into rounds about three-quarters of an inch thick. These slices are served as bite-sized snacks or appetizers that combine creamy, cheesy, and mildly spicy flavors. The roll ups pair well with salsa or other dips for added freshness.

Leftover roll ups should be stored tightly covered in the refrigerator and are best consumed within a few days to maintain texture and flavor.

  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 1 package Ranch dressing mix
  • 1 cup cheddar cheese shredded
  • 1 can diced green chiles 4 ounce can - drained
  • 1 can olive 4 ounces, ripe, chopped
  • 1/2 cup green onion finely chopped
  • 5 flour tortillas 10" inch in size

Instructions

  1. Beat together the cream cheese, sour cream and ranch dressing mix with a hand held or stand up mixer.
  2. Then stir in the cheddar cheese, green chiles, green onions and black olives.
  3. Spread the mixture evenly on each of the flour tortillas and roll them up tightly.
  4. Wrap each one in plastic wrap and refrigerate for at least 2 hours or up to over night.
  5. When ready to serve, slice each wrap into approximately ¾” thick rounds.  Serve with your favorite salsa and enjoy!

Notes

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days to keep the roll ups fresh.
