Cream of Asparagus Soup Recipe
Description
This Cream of Asparagus Soup Recipe starts by sautéing chopped onions in butter until soft. Fresh asparagus with tough ends removed is added along with chicken broth and pepper, then simmered until the asparagus is very tender. The soup is then pureed until smooth, either with a handheld or countertop blender, and finished with sour cream for creaminess and subtle tang.
The soup has a pale green color and a delicate asparagus flavor enhanced by the richness of butter and the slight acidity from sour cream. Its texture is smooth and creamy, making it an approachable way to enjoy asparagus beyond steamed or roasted preparations.
This soup can be served warm as a starter or light meal, complemented with crusty bread or a simple salad. Adjust salt and pepper seasoning to taste and consider using unsalted butter to control sodium levels. The recipe keeps aromatics simple to highlight asparagus without overpowering spices.
Ingredients
- 2 lbs asparagus (from 2 bunches, tough ends snapped off)
- 1 tbsp butter unsalted
- 1 onion chopped, medium
- 6 cups chicken broth reduced sodium
- 2 tbsp sour cream or full fat Greek yogurt, low fat
- kosher salt to taste
- black pepper to taste
Instructions
- Melt butter over low heat in a large pot. Add the onion and sauté until soft, about 2 minutes.
- Cut the asparagus in half and add to the pot along with chicken broth and black pepper, to taste. Bring to a boil, cover and cook low about 20 minutes or until asparagus is very tender.
- Remove from heat, add sour cream and using your hand held blender, puree until smooth (or in two batches in a large blender).
