Cream of Celery Soup

This Cream of Celery Soup combines simple ingredients like butter, onion, celery, flour, and whole milk to create a smooth, creamy texture with a mild, savory flavor. The celery softens during gentle simmering, blending into a velvety base thickened by a roux made with flour and butter. This soup offers a comforting warmth ideal for chilly days or as a starter. The final touch of garnishing with fresh celery or croutons adds a pleasant texture contrast to the creamy body of the soup.

Description

Cream of Celery Soup features chopped celery sautéed with onion and butter until softened, then thickened with flour to form a light roux. Gradually adding whole milk and simmering allows the flavors to meld and the soup to thicken to a smooth consistency. The careful cooking process ensures the celery becomes tender without losing its subtle flavor. The resulting soup has a gentle creamy mouthfeel and a delicate balance between the vegetal celery notes and savory undertones from the sautéed onions and butter.

This soup is well suited as a simple starter or a light lunch accompaniment. It can be garnished with chopped fresh celery or croutons to introduce a crunchy element contrasting the creamy soup body. The moderate seasoning with salt supports the natural celery flavor without overpowering it.

Ingredients

Servings
  • 2 tablespoons butter
  • 2 tablespoons onion chopped
  • 1/4 teaspoon salt
  • 2 cups celery chopped
  • 2 tablespoons flour
  • 2 cups milk whole

Instructions

  1. In a medium-sized saucepan over medium heat combine butter and chopped onion. Cook until onion becomes translucent. Add 1/4 teaspoon of salt to the onions when cooking them. Add 2 cups chopped celery to the onions and stir for a moment or two. Add 2 tablespoons of flour to the pot and cook for about a minute. Cook the flour until it becomes fragrant like pie crust.
  2. Add about 1/2 cup of milk to the pot and stir until the soup begins to thicken. Then add another 1/2 of milk and stir until the soup begins to thicken. Add the remaining milk in 1/2 cups increments until all of the milk is used. Turn the soup down to low, and simmer for about 15 minutes or until the celery becomes soft and tender. You may want to garnish the soup with some chopped celery, or even croutons when you are ready to serve.
