Creamed Chipped Beef on Toast (S.O.S.)

Creamed Chipped Beef on Toast, also called S.O.S., is a traditional dish featuring rinsed dried beef pieces cooked in a creamy white sauce made from butter, flour, milk, and cayenne pepper, then served on toasted bread. The sauce is thick and smooth with a slight kick, balancing salty beef with a comforting richness. This dish provides a savory, hearty breakfast or light meal option.

Description

This recipe begins by thoroughly rinsing dried beef slices to reduce their natural saltiness before chopping them into small pieces. Butter is melted and combined with flour and a pinch of cayenne pepper to form a roux, which is cooked briefly to develop a subtle nutty flavor and remove raw flour taste.

Milk is then gradually whisked in to create a smooth, thickened cream sauce. The chopped beef is added to the sauce and simmered until heated through and properly thickened. Seasoning with sea salt and freshly ground black pepper is adjusted at the end due to the original saltiness of the beef.

The completed creamed beef mixture is ladled over hot toasted bread slices and served immediately. The soft toast absorbs some sauce, providing a textural contrast. This dish is known for being filling and straightforward, often prepared as a comforting breakfast or brunch item.

Ingredients

Servings
  • 1 dried beef slices rinsed well & chopped, jarred
  • 4 tbsp butter
  • 4 tbsp flour
  • Pinch cayenne pepper
  • 2 cups milk
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • bread toasted

Instructions

  1. Rinse the slices of dried beef really well–they are VERY salty! Once you have rinsed well, pat dry with a paper towel.
  2. Chop the beef into small bite-sized pieces. Set aside.
  3. Heat the butter in the large saucepan over medium heat.
  4. Add the flour and a pinch of cayenne pepper to the melted butter and whisk until well combined and cooked through, about 45 seconds.
  5. Very slowly add the milk while whisking continually.
  6. Once the milk has all been added, add the chopped dried beef.
  7. Cook, stirring occasionally, for a few minutes until thickened.
  8. Taste and season with sea salt and freshly cracked pepper, to taste, if needed.
  9. Serve on top of dry toast immediately. Enjoy.
