Creamed Chipped Beef On Toast (S.O.S.)

Creamed Chipped Beef on Toast, often called S.O.S., is a savory dish featuring dried, thinly sliced beef in a creamy white sauce served over toasted bread. The sauce is made by cooking a butter and flour roux, then whisking in milk and half and half to create a rich, pepper-spiced base that coats the tender beef pieces. This comforting dish combines smooth, velvety texture with hearty bits of meat, making it suitable for breakfast, lunch, or dinner. It’s practical when you want a filling meal using simple pantry ingredients.

Description

The Creamed Chipped Beef on Toast recipe centers on a creamy sauce enriched with butter, flour, and a mix of milk and half and half. Black pepper and a pinch of cayenne add mild heat and depth. After preparing a smooth roux, the dairy is added gradually to form a luscious gravy that is then mixed with the bite-sized dried beef pieces. Toasted bread provides a crisp, warm foundation for this creamy topping.

The texture is silky and slightly thickened, perfectly coating the beef chunks without becoming pasty. The balance of creamy subtlety with the salty, chewy preserved beef creates a satisfying contrast. It's a humble dish designed to be hearty and soothing.

Serve this as a standalone light meal or paired with eggs or fresh greens for a more substantial plate. Its mild peppery flavor and creamy texture make it adaptable as a filling anytime comfort food.

The recipe can be halved or doubled as needed. Adding fresh parsley as a garnish introduces a fresh herbal note and brightens the dish.

Ingredients

Servings
  • 6 ounces beef roughly chopped into bite sized bits, dried, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ¼ teaspoon black pepper coarsely ground
  • pinch cayenne pepper
  • 1 ½ cups milk
  • ½ cup half and half
  • 4 lices bread toasted
  • 2 teaspoons parsley chopped, optional, fresh

Instructions

  1. Melt the butter over medium high heat in a medium skillet with 2-3" high sides.
  2. Sprinkle the flour, black pepper and cayenne pepper over the flour and whisk until the flour is completely mixed with the butter and no dry bits remain.
  3. Cook, whisking constantly for one minute.
  4. Whisk in the milk and half and half and stir constantly until the mixture comes to a boil. Cook for one minute, again, stirring constantly so it doesn't burn or stick to the bottom of the skillet.
  5. Remove from heat and stir in the beef to mix well.
  6. Place a piece of toast on each plate and divide the creamed chipped beef over the toast. Sprinkle with parsley and serve.

Notes

  • This dish works well for any meal of the day, offering a versatile comfort food option.
  • The recipe quantity is flexible; you can halve or double it based on servings needed.
  • Adding fresh parsley on top adds color and a mild herbal flavor.
