Creamed Corn Au Gratin
Description
This Creamed Corn Au Gratin is made by simmering frozen corn kernels with heavy cream, kosher salt, sugar, white pepper, and butter until heated through, then thickening the mixture by incorporating a roux of melted butter and flour stirred in until smooth. The creamy corn mixture is transferred to a casserole dish and generously topped with Parmesan cheese.
The dish finishes under a broiler where the cheese melts, bubbles, and browns, creating a golden crust that contrasts with the creamy base. The flavor centers on sweet corn enhanced by the rich cream and sharp Parmesan, balanced with subtle seasoning.
Creamed Corn Au Gratin can be served immediately as a comforting side dish, pairing well with roasted meats or holiday meals. The broiling step requires attention to prevent burning but results in an appealing crispy top.
Ingredients
- 16 oz corn kernel frozen
- 12 oz heavy whipping cream
- 1 tsp kosher salt
- 2 TB sugar
- ⅛ tsp white pepper
- 2 TB butter salted
- 2 TB flour
- 3 TB Parmesan Cheese
Instructions
- In a medium, heavy pot, combine corn, cream, salt, sugar, and white pepper. Bring to a boil and immediately reduce to simmer. Simmer 5 minutes, stirring occasionally. Cover and turn heat off.
- In a separate pan, melt butter and stir in the flour; whisk or stir constantly until it forms a roux (smooth, non-lumpy, yet thick mixture.) Add roux to the pot of corn. Mix well to combine.
- Transfer corn mixture to a mid-sized casserole dish. Sprinkle with Parmesan cheese evenly over the top. Set under the broiler and broil just until cheese is nicely browned and bubbling.
- Serve immediately.
