Creamed Corn in the Instant Pot
Description
Creamed Corn in the Instant Pot combines frozen corn, heavy cream, butter, sugar, salt, pepper, and cream cheese to create a creamy and indulgent side dish. Using the pressure cooker shortens the cooking time, melting the cream cheese into the corn and integrating all flavors evenly. The addition of sugar and butter balances the natural sweetness of the corn.
The resulting dish has a smooth, velvety texture with enough body to serve alongside roasted meats or holiday meals. The pressure cooking method makes it easy to prepare without constant attention.
Variations include using flavored cream cheeses such as jalapeno or bacon for added complexity. The recipe works equally well with fresh or canned corn, though frozen corn simplifies prep by allowing ingredients to go straight into the pot. Frozen corn might add a bit of time for pressure build-up but does not affect the cooking outcome.
Ingredients
- 24 oz corn frozen
- ½ cup heavy cream
- 1 butter stick
- 1 tbsp sugar
- ¼ tsp salt or to taste
- ¼ tsp black pepper or to taste
- 8 oz cream cheese
Instructions
- Place all of the ingredients in the Instant Pot and secure the lid.
- Turn the pressure to HIGH and cook for 3 minutes. When the cook cycle is complete, perform a Quick Release. Open the lid, stir, and enjoy!
Notes
- The recipe is designed for an 8-quart Instant Pot, but adjustments may be needed for smaller sizes.
- Full-fat traditional cream cheese is recommended for best texture, though reduced fat versions are usable.
- Flavored cream cheeses like jalapeno, chive, or bacon can be used to vary the flavor profile.
- Fresh, frozen, or canned corn works, but frozen corn might extend pressure build time slightly.
- Heavy whipping cream's high-fat content prevents curdling under pressure and adds richness.
