Creamed Peas

Creamed Peas feature tender frozen peas enveloped in a smooth, creamy sauce made from a butter and flour roux combined with milk. The sauce has a gentle thickness that coats the peas without overwhelming their natural sweetness. This classic preparation offers a comforting, velvety texture and subtle seasoning, making it a versatile side dish to accompany various meals. Adjusting the sauce consistency is straightforward by adding more milk as needed, ensuring the dish remains luscious and well-balanced on the palate.

Description

Creamed Peas are created by cooking frozen peas in a béchamel-like sauce made from butter, flour, and milk. Starting with a roux formed by melting butter and whisking in flour over medium heat, milk is gradually incorporated to develop a smooth, lightly thickened sauce. The peas are then stirred in and gently heated until thoroughly warmed, preserving their texture and sweetness. Seasoned simply with salt and pepper, the dish showcases a velvety sauce that coats the peas evenly without overpowering them. The method allows for adjusting thickness by adding more milk if the sauce becomes too thick. This preparation yields a warm, creamy side that pairs well with a range of main courses and adds richness and mild flavor to the meal.

Ingredients

Servings
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (or cream)
  • 1 (12-ounce) bag peas about 2 cups, frozen
  • salt to taste
  • black pepper to taste

Instructions

  1. Melt butter over medium heat in a small skillet or sauce pan.
  2. Add flour and whisk for about 30 seconds to form a roux.
  3. Add milk a little at a time to form the sauce, whisking constantly. You want the sauce to have the consistency of a thin gravy or béchamel sauce. Heat gently and avoid bringing the sauce to a boil.
  4. Stir in the peas and continue gently stirring until peas are heated through. About 7-8 minutes.
  5. Add salt and pepper to taste. If the sauce becomes too thick, add more milk, a little at a time, until you reach your desired consistency. Serve immediately.

Notes

  • Sauté finely chopped onion in butter until translucent before adding flour for extra depth of flavor.
  • Add cooked or roasted red potatoes to the creamed peas to create a heartier dish.
