Creamed Spinach
Description
This Creamed Spinach combines roughly chopped fresh spinach with finely diced onion and minced garlic, all cooked in butter until the onion softens and the spinach wilts. The addition of heavy cream and cream cheese creates a thick, creamy sauce that coats the vegetables. Parmesan cheese is stirred in for saltiness and depth.
The result is a smooth, richly flavored dish with a balance of tender greens and luscious dairy. The fresh spinach provides a slight earthiness, while the cream and cheese offer indulgence and smoothness. Light seasoning with kosher salt and freshly ground black pepper enhances the overall taste.
This side pairs well with grilled or roasted meats, especially steak or chicken. It can be served hot and is especially comforting during cooler months or when a creamy vegetable dish is desired.
If desired, additional cream cheese can be added to adjust creaminess. Leftovers store well refrigerated for up to three days and should be reheated gently to avoid breaking the sauce.
Ingredients
- 20 ounces spinach two 10 oz bags, fresh
- 2 TBSP butter
- 1 yellow onion small
- 2 cloves garlic
- ½ cup heavy cream
- 4 ounces cream cheese
- ¼ tsp kosher salt
- black pepper to taste, freshly ground
- ¼ cup Parmesan Cheese plus extra to taste, freshly grated
Instructions
- First prep the veggies. Roughly chop spinach. Peel and finely dice onion. Peel and mince garlic.
- In a large skillet over medium-high heat, melt butter. Add and onion and cook until tender, 5-7 minutes.
- Next add garlic and cook for one additional minute until fragrant.
- Season with salt and pepper. Add fresh chopped spinach and stir frequently until wilted.
- Add heavy cream and cream cheese and reduce heat to medium. Simmer until the cream cheese melty and has thickened into a sauce.
- Lastly add Parmesan cheese and stir to combine. That's it! You can add extra salt and pepper to taste as well as any additional parmesan cheese your heart desires. For extra creamy creamed spinach you're welcome to stir in a little extra cream cheese at the end if you'd like. Let your taste buds be your guide! Serve hot.
STORAGE AND LEFTOVERS
- Store leftovers in an airtight container in the fridge for up to 3 days. Since we're working with a creamy sauce, avoid high heat when reheating. You can reheat either in the microwave or stovetop in a skillet/saucepan.
- For stovetop, heat over low heat until warmed through, stirring frequently. For microwave, heat in 30 second increments in a microwave-safe bowl, stirring in-between to help distribute the heat.

- Use full-fat dairy products for best creaminess and sauce consistency.
- Adjust spinach quantity after initial cooking to increase leaf-to-sauce ratio if preferred.
