Creamed Spinach

This creamed spinach recipe uses frozen chopped spinach combined with sautéed onions, cream cheese, Parmesan, and milk to create a rich, velvety side dish. The spinach is thoroughly drained to avoid excess water, resulting in a creamy texture with a subtle nutmeg undertone. It is an easy way to incorporate a smooth and flavorful green vegetable accompaniment suitable for various meals.

Description

Creamed Spinach features frozen chopped spinach gently cooked then well-drained to remove moisture, ensuring a thick and creamy consistency. Onions sautéed in butter add a mild sweetness and depth, while cream cheese and Parmesan enrich the mixture for a smooth and slightly tangy finish. The mild seasoning of salt, pepper, and nutmeg delivers a balanced flavor that complements the natural earthiness of spinach. The dish is warmed on the stove until the milk thickens slightly, binding the ingredients together.

The soft texture and mellow taste make this creamed spinach suitable as a classic side for meats or poultry, providing both color and creaminess to a plate. It reheats well and can be served warm alongside a variety of entrées.

Servings
  • 2 (10-ounce) containers spinach frozen, chopped
  • 3 tablespoons butter unsalted
  • 1 onion diced, small
  • 1 ½ cups milk
  • ½ cup Parmesan Cheese grated
  • 4 ounces cream cheese
  • ½ teaspoon salt
