Description
The Creamed Spinach Recipe combines fresh or thawed spinach with a smooth and rich cream sauce. Spinach is first wilted quickly in olive oil and drained to remove excess moisture. Meanwhile, minced onion is sautéed in butter until soft, then cream cheese is melted in before adding heavy cream and seasonings. The creamed spinach is then stirred into the sauce, resulting in a velvety texture and balanced flavor from the garlic powder and seasoned salt.
The mild and creamy dish works well as a side to meats or other main dishes, offering tender spinach softened through gentle cooking. The seasoned salt and pepper can be adjusted to taste for desired seasoning strength.
Frozen spinach can be used after being well drained to reduce water content. Parmesan cheese can be added for additional flavor if desired. Leftover creamed spinach can be stored in an airtight container in the refrigerator for up to 4 days.
Ingredients
- 1 teaspoon olive oil
- 1 pound spinach or 10 oz frozen spinach, thawed and squeezed dry, fresh
- ¼ cup yellow onion minced
- 1 tablespoon butter
- 2 ounces cream cheese softened, cubed
- ⅓ cup heavy whipping cream
- ¼ teaspoon garlic powder
- ⅛ teaspoon seasoned salt
- black pepper to taste
Instructions
- Wash and dry the spinach leaves if using fresh. Pinch off any tough stems and roughly chop the spinach.
- Heat the olive oil in a medium skillet over medium heat. Cook the spinach until wilted, about 3 minutes. Remove from the pan and place in a strainer to drain.
- Reduce the heat to medium low and add the onion and butter to the skillet. Cook for 3 to 4 minutes or until tender.
- Add the cream cheese and stir until melted.
- Whisk in the heavy cream, garlic powder, and salt. Simmer 1 to 2 minutes or until thickened.
- Gently squeeze any excess liquid from the spinach and stir it into the cream sauce. Taste and season with additional seasoned salt and pepper.
Notes
- Frozen chopped spinach may be used in place of fresh; thaw and squeeze dry to remove excess water.
- Parmesan cheese can be mixed in with the spinach for extra flavor.
