Instructions

  1. Blanch Spinach: Bring a large pot of salted water to a boil. Prepare a large bowl with ice water. Add the fresh spinach to the boiling water and blanch for about 1-2 minutes, or until wilted. Immediately transfer the spinach to the ice water to stop the cooking process. Drain the spinach and squeeze out as much water as possible. Chop the spinach finely and set aside.
  2. Sauté Onion and Garlic: Melt the butter over medium heat in a large skillet. Add the diced onion, and minced garlic, and sauté until the onion becomes translucent, about 4-5 minutes.
  3. Add Cream Cheese and Cream: Stir in the softened cream cheese and heavy cream. Cook, stirring constantly, until the cream cheese is fully incorporated and the mixture becomes creamy. Bring to a soft boil on low heat and let thicken for about 8-10 minutes.
  4. Season and Add Spinach: Season the mixture with grated Parmigiano cheese, ground nutmeg, Italian seasoning, salt, and black pepper to taste. Add the chopped spinach to the creamy mixture and stir well to combine.
  5. Heat: Cook for an additional 5 minutes, allowing the spinach to heat through and absorb the flavors of the sauce.
  6. Serve: Transfer the creamy spinach to a serving dish and serve hot.
  7. This creamy spinach is a delightful accompaniment to your steak or any other main course. Enjoy!

Notes

  • Use Fresh Spinach: Whenever possible, opt for fresh spinach over frozen. It has a better texture and flavor. However, frozen spinach can be a convenient substitute if you’re short on time.
  • Thoroughly Wash Fresh Spinach: If using fresh spinach, wash it thoroughly to remove any dirt or grit. After washing, be sure to drain and dry it well.
  • Chop Spinach Finely: To ensure a uniform texture in your creamed spinach, chop the spinach finely after blanching or washing.
  • Don’t Overcook: Be careful not to overcook the spinach when blanching or sautéing. It should be wilted but still vibrant green.
  • Season Well: Season the creamed spinach generously with salt and black pepper. The seasoning is crucial to enhance the flavors.
  • Experiment with Cheese: While Parmesan is traditional, feel free to experiment with other cheeses like Gruyère, Asiago, or Pecorino Romano for unique flavor profiles.
  • Adjust Creaminess: You can adjust the creaminess of your dish by adding more or less cream or milk to achieve your desired consistency.
  • Customize with Herbs: Fresh herbs like thyme, chives, or rosemary can add a burst of freshness and aroma to your creamed spinach. Sprinkle them on top just before serving.
  • Add a Pinch of Nutmeg: A small amount of ground nutmeg adds a subtle warmth and depth of flavor to your creamed spinach. Be cautious not to overdo it, as nutmeg can quickly overpower the dish.
  • Avoid Grainy Texture: To avoid a grainy texture in your creamed spinach, ensure that your cheese is fully melted into the cream sauce.
