  • 1 sweet onion , chopped
  • 1 clove garlic , minced
  • 20 ounces spinach fresh
  • 1/4 teaspoon nutmeg
  • 2 tablespoons Parmesan Cheese , finely gratd
  • 1/4 cup heavy cream
  • sea salt fine
  • black pepper fine

Instructions

  1. Melt the butter in a heavy bottom saucepan over medium-high heat. Add the onion, sauteing for 3-4 minutes, or until it starts to soften.
  2. Stir in the garlic, sauteing for an additional minute.
  3. Stir in the spinach, tossing to coat and allowing it wilt.
  4. Add the nutmeg, Parmesan cheese and heavy cream. Toss to combine and allow the sauce to thicken.
  5. Season the spinach with fine sea salt and ground pepper to taste.
