Creamy Avocado Dressing
Description
This Creamy Avocado Dressing combines mashed ripe avocado with extra virgin olive oil, lemon juice, and garlic to create a smooth, flavorful dressing. Sour cream or Greek yogurt may be added for extra creaminess, but the dressing works well without these. Water is incorporated to reach an easily pourable consistency, avoiding thickness that could impede drizzling.
The dressing is blended until smooth and can be adjusted with additional salt, pepper, lemon juice, or olive oil after tasting. The fresh garlic crushed with a garlic crusher lends a juicy, bright flavor rather than dry garlic pieces.
It serves well as a salad dressing or dip, providing a creamy texture and fresh herbal notes if extra flavorings or herbs are added. Variations include southwestern lime and cilantro styles, ranch-style dried herbs, or other fresh or dried herb blends.
This dressing keeps in the refrigerator for about three days without browning, thanks to the ingredients used. If fresh garlic is omitted or replaced with garlic powder, storage can extend to about five days.
Ingredients
Creamy Avocado Dressing:
- 1/2 cup avocado smush into cup to measure, or estimate - 1/2 medium avo, ripe
- 3 tbsp extra virgin olive oil
- 3 tbsp sour cream Greek or plain, unsweetened) - OPTIONAL (Note 1, or yogurt
- 2 tbsp lemon juice
- 1 garlic minced using garlic crusher (Note 2, clove, small
- 4 tbsp water (to thin out, it's very rich!)
- 1/2 tsp salt
- 1/4 tsp black pepper

Instructions
- Place all ingredients into a Nutribullet or small food processor and blitz until smooth. (Inc Extra Flavouring Options)
- Use water to thin to just pourable consistency (so it's not super gloopy and thick).
- Taste and add the following to taste: salt, pepper, lemon, oil. Use as salad dressing!
- Keeps 3 days in the fridge without going brown. See Note 3 for how to keep even longer!
Notes
- Incorporate sour cream or yogurt to add freshness and creaminess, though optional.
- Use a garlic crusher for minced garlic to ensure juicy, bright flavor perfect for dressings.
