Creamy Avocado Herb Dressing (Vegan, Oil-Free!)
Description
The Creamy Avocado Herb Dressing combines ripe avocado with fresh parsley and basil (or other fresh herbs like dill or cilantro), lemon juice, minced garlic, white wine vinegar, and a small amount of agave syrup for subtle sweetness. Pureeing these ingredients results in a smooth, creamy consistency without any added oils, making it suitable for vegan and oil-free dietary preferences. The dressing has a fresh herbal flavor supported by the citrus brightness of lemon juice and acidity from the vinegar. Adding water gradually allows for adjusting thickness, making it versatile as a salad dressing or a dip for vegetables. The recipe also notes options to replace avocado with dairy-free yogurt or silken tofu to alter texture and base flavor.
This dressing can complement a range of dishes by adding creaminess and herbaceous notes without fat from oils. It is best used fresh or stored chilled for a short period.
Ingredients
- 1 avocado or 1/2 large avocado, small
- 1/3 cup parsley fresh
- 1/3 cup basil or dill, cilantro, etc, fresh
- 3 Tbsp. lemon juice fresh
- 3 Tbsp. water (more as need for desired consistency)
- 1-2 cloves garlic minced
- 1 1/2 tsp. white wine vinegar
- 1 tsp. agave syrup or other sweetener
- 1/8 tsp. salt
Instructions
- Puree all ingredients in a small food processor or blender until smooth. (Scrape down sides with spatula as needed.)
- Add more water if needed, a little at a time, until it reaches your desired consistency. Taste and adjust seasonings as needed. (More salt, lemon juice, sweetener, etc.)
Notes
- Avocado can be substituted with unsweetened dairy-free yogurt or silken tofu to vary texture and base flavor.
- Adjust water quantity to achieve desired consistency, using less water for a thicker veggie dip or more for a pourable salad dressing.
- The recipe yields approximately three-quarters of a cup of dressing.
