Creamy Avocado Pasta
Description
The Creamy Avocado Pasta combines ripe avocados with garlic, fresh basil and parsley, heavy cream, olive oil, lemon juice, salt, and Parmesan cheese to create a smooth, rich sauce. After blending these ingredients until smooth, the sauce is tossed with hot angel hair or spaghetti pasta which has been cooked al dente. The slightly firm pasta texture holds up well to the creamy, rich sauce, while the fresh herbs add brightness and the Parmesan cheese contributes savory depth. Lemon juice adds a subtle acidity and helps keep the avocado from browning.
The dish highlights the freshness of the avocado and herbs, balanced by the creaminess of heavy cream and the salty tang of Parmesan. Finishing garnishes such as additional grated Parmesan, fresh herbs, and optional chili flakes enhance both flavor and presentation. The use of pasta water thins the sauce to a perfect consistency that clings well to the noodles.
This pasta works well as a light main or side dish, suitable for those who enjoy creamy yet fresh-tasting sauces. The recipe is simple but depends on ripe avocados and fresh herbs for its signature flavor and texture.
Ingredients
- 12 ounces pasta such as angel hair or spaghetti, long
- 2 cloves garlic minced
- 2 avocado ripe
- 2 tablespoons basil fresh leaves
- 2 tablespoons parsley chopped, fresh
- 2 tablespoons heavy whipping cream do not substitute milk
- 1 tablespoon olive oil
- 2 teaspoons lemon juice fresh
- ½ teaspoon salt
- 3 tablespoons Parmesan Cheese divided, more for garnish, grated
- fresh herbs and chili flakes for garnish, optional
Instructions
- Combine garlic, avocados, basil, parsley, heavy cream, olive oil, lemon juice, salt, and 2 tablespoons parmesan cheese in a food processor.
- Pulse the mixture until it is smooth and creamy.
- Cook pasta al dente according to package directions. Drain well and reserve pasta water, do not rinse.
- While pasta is hot, toss with avocado sauce adding pasta water as needed to thin out the sauce.
- Garnish with remaining parmesan cheese and additional herbs if desired.
Notes
- For best texture, cook pasta al dente to prevent it from becoming mushy when combined with the avocado sauce.
- Adding extra fresh basil to the sauce and saving some for garnish enhances the herbal aroma and presentation.
- Lemon juice in the sauce helps preserve the avocado's green color and adds balanced acidity.
- Do not rinse pasta after boiling; the starches help the sauce cling better.
- Using reserved pasta water adjusts the sauce consistency and improves its adherence to the pasta.
- Garnishing with fresh Parmesan cheese and optional chili flakes adds flavor contrast and visual appeal.
