  • 2 egg
  • 1/4 cup heavy cream or cream
  • 1/3 cup parmesan
  • 1 tsp parsley freshly chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/2 pound Bacon
  • 3 mushrooms chopped (optional)
  • 1 onion chopped (optional, small
  • 1/2 pound pasta

Instructions

  1. Beat the eggs, cream, Parmesan, parsley, salt, and red pepper together in a bowl.  
  2. Fry the bacon until crisp, then crumble and set aside. 
  3. With 1 -2 Tablespoons of bacon grease, sauté the onion and the mushrooms until the onions are translucent and golden. 
  4. Drain the pasta, and while it's still warm, add the onions and mushrooms. 
  5. Pour the cream mixture into the pasta, and stir over low heat for one to two minutes. Do this on low heat, or you will make scrambled eggs.
  6. Stir in the crumbled bacon and serve with additional parmesan.

Notes

  • Cook the sauce over low heat to avoid scrambling the eggs and to maintain smooth creaminess.
  • You can omit mushrooms or onions if desired for a more classic carbonara.
  • Using freshly chopped parsley adds brightness to balance richness.
  • Serve immediately after mixing to enjoy the creamy texture at its best.
