Creamy Bacon Gravy

Creamy Bacon Gravy is a savory sauce combining crisp bacon, bacon fat, and a smooth flour-based roux whisked with whole milk to a thick, velvety texture. Crumbled bacon mixed in adds smoky, meaty bits throughout, making it ideal for spooning over warm biscuits for a hearty meal accompaniment.

Description

This Creamy Bacon Gravy relies on rendered bacon fat as the fat base for the roux, creating a flavorful foundation. After cooking bacon to crispness, the fat is reserved to cook the flour, which helps remove starchy flavors and thickens the milk into a creamy sauce. Gradually adding milk and stirring yields a smooth, bubbly gravy with a gentle richness.

Stirred in crumbled crispy bacon imparts smoky flavor and texture contrasts. Seasoned with salt and black pepper, the gravy complements freshly baked biscuits well and makes a satisfying breakfast or brunch addition.

To ensure a successful roux, use at least 2 tablespoons of bacon fat; supplement with butter if needed. Cooking the flour and fat mixture for a full minute improves the taste by eliminating raw flour notes. Adding milk in increments while whisking prevents lumps and creates a thick, smooth gravy.
