Creamy Bacon Mushroom Chicken begins by cooking chopped bacon until crisp, reserving half the bacon fat for flavor. Thin chicken slices are seasoned with salt, pepper, and smoked paprika, then sautéed in the bacon fat until nearly cooked through. Mushrooms and onions are then caramelized in butter and the reserved bacon grease to develop deep flavor. Garlic is briefly sautéed to release aroma without browning.
The pan is deglazed with white wine to lift browned bits, adding depth to the sauce. Chicken broth, heavy cream, and Parmesan cheese are added and simmered to thicken and meld flavors, creating a rich and creamy base. The chicken and bacon are returned to the sauce to finish cooking and absorb flavor. The result is tender chicken with a smoky, creamy mushroom sauce that balances savory and slightly tangy notes.

Ingredients
- 1 ½ pounds chicken breast sliced thin
- 8 lices uncured bacon chopped
- 8 ounces baby bella mushroom sliced
- ½ yellow onion sliced thin
- 1 cup chicken broth
- ⅔ cup heavy cream
- 1 cup Parmesan Cheese grated
- ½ cup white wine I use Pinot Grigio
- 3 cloves garlic minced
- 2 tablespoons butter
- 1 tablespoon parsley fresh
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Add the chopped bacon to a skillet over medium heat and cook until crisp.
- Remove the bacon and allow to drain on paper towels. Reserve half the bacon grease to use later, leaving half in the skillet. Add the chicken to the skillet, sprinkle with half the salt, pepper and smoked paprika.
- Sauté for a few minutes on each side, until the chicken is almost cooked through. It will finish cooking in the sauce.
- Remove the chicken and set it aside. Add in the butter and reserved bacon grease, then pour in the mushrooms, onions, remaining salt and pepper.
- Sauté for 5-7 minutes or until they start to caramelize. Push them aside and add in the garlic, then continue sautéing for another 10 seconds, making sure not to brown it.
- Deglaze the pan with the white wine (or chicken broth), scraping up the brown bits of flavor. Allow some of the wine to evaporate, then pour in the chicken broth, heavy cream and parmesan cheese.
- Simmer for 10 minutes uncovered, then add chicken and bacon back in. Simmer for another 5 minutes, then add in the parsley and serve.
