Creamy Bacon Tomato Pasta
Description
To prepare this dish, pasta is boiled in salted water while bacon is cut into small pieces and fried until crisp, then excess fat is removed leaving a tablespoon in the pan. Garlic is briefly sautéed to release aroma before stirring in chopped tomato, heavy cream, and Italian seasoning. The sauce simmers until it slightly thickens to coat the pasta evenly.
The bucatini pasta used here offers a firm bite with a hollow center that holds the creamy sauce, while the bacon contributes a crunchy, savory contrast. The combination results in a comforting texture balance with the creamy, mildly herby sauce coating each strand. Parmesan cheese can be stirred in or sprinkled on top for an extra layer of flavor.
This recipe serves two to four, depending on appetite and side dishes. Because bacon is salty, additional salt is generally unnecessary. Adding reserved pasta water can adjust sauce consistency. Serve immediately to enjoy the creamy sauce texture and flavor contrast.
Ingredients
- 8 ounces pasta I used bucatini, uncooked
- 6 trips Bacon
- 1-2 cloves garlic minced
- 1 medium tomato cut into small pieces
- 3/4 cup heavy cream aka whipping cream
- 1/4 teaspoon Italian seasoning
- black pepper to taste
- Parmesan Cheese to taste, garnish, freshly grated
Instructions
- Boil a salted pot of water for your pasta.
- Meanwhile, cut the bacon into small pieces (I like using kitchen shears for this) and add it to a skillet over medium-high heat. Cook the bacon until crispy (about 7-10 minutes).
- Spoon out excess fat (leave about 1 tablespoon in there).
- Add the garlic to the skillet and cook for 30 seconds.
- Stir in the tomato, cream, and Italian seasoning. Let it bubble for 5 minutes or so until the sauce has reduced to your liking (turn the heat down if it starts to furiously boil). It's not a super thick sauce, but it should be thick enough that it coats the back of a spoon.
- Drain the pasta, add it to the skillet, and toss with the sauce (add a bit of the hot pasta water prior to draining it if the sauce gets too thick for your liking). You can either add the parmesan at this step and toss the whole thing or grate some over top of each bowl. Serve immediately.
Notes
- Serving size suits 2-4 people; double the recipe if feeding very hungry guests without side dishes.
- The bacon provides ample saltiness; additional salt may not be needed.
