Creamy Balsamic Dressing

This Creamy Balsamic Dressing blends mayonnaise, balsamic vinegar, and mustard with a touch of garlic powder and Italian seasoning, balanced by brown sugar's mellow sweetness. It creates a smooth, tangy, and slightly sweet dressing that enhances leafy greens and vegetable salads. Adjusting sugar levels allows tailoring to different balsamic vinegars’ sweetness.

Description

Creamy Balsamic Dressing combines mayonnaise and balsamic vinegar to create a smooth, tangy dressing with subtle sweetness from brown sugar. Dijon mustard and garlic powder add mild pungency and depth, while Italian seasoning brings herbal notes. The dressing achieves a balanced flavor that's creamy and slightly sweet, suitable for drizzling over salads. Whisking the ingredients thoroughly ensures a uniform consistency. It can be used immediately but benefits from a few hours in the fridge to allow the dried herbs to soften and flavors to meld. The recipe yields just under a cup, enough for several salads, and can be adjusted easily by modifying the sugar to suit different balsamic varieties.

Ingredients

Servings
  • 3/4 cup mayonnaise
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1 tablespoon brown sugar or to taste
  • 1/2 teaspoon Italian seasoning
  • salt to taste
  • black pepper to taste

Instructions

  1. Add dressing ingredients to a bowl and whisk together thoroughly. Taste and adjust as needed so the dressing suits your tastes. Note: some balsamic vinegars are a lot sweeter than others, so start with half the amount of sugar suggested, taste, and add more if needed.
  2. Transfer to a jar and refrigerate for up to a week. You can eat it right away, but I prefer to leave it for a few hours so the flavors meld more and the dried herbs soften up.

Notes

  • Use less brown sugar initially, then adjust to suit the sweetness of your balsamic vinegar.
  • Let the dressing rest in the fridge for a few hours to soften herbs and blend flavors.
  • Store in an airtight jar for up to one week in the refrigerator.
  • One tablespoon counts as a single serving for nutritional calculations.
