Creamy Cauliflower Soup

Creamy Cauliflower Soup is a comforting blend of sautéed cauliflower, onion, celery, carrots, and garlic seasoned with dried thyme and oregano. Thickened with cornstarch and enriched with butter, olive oil, vegetable broth, and milk, this smooth soup offers a mild, savory flavor and velvety texture. It is served hot and can be an easy starter or light meal.

Description

This soup begins by cooking cauliflower florets with diced onion, sliced celery, diced carrots, and minced garlic in butter and olive oil until the vegetables soften. Dried thyme and oregano add herbal notes, while cornstarch is used to thicken the mixture gently. Vegetable broth and milk are added and brought to a boil, then simmered until it thickens.

The resulting soup is creamy without cream, balancing the delicate flavors of cauliflower and aromatics with a smooth texture. The use of milk and butter provides richness, while the broth adds body. It is seasoned with salt and pepper to taste and served warm.

This recipe is suitable for a light, vegetable-based soup course or a comforting meal on cooler days. The ingredients are common pantry items, and the method straightforward, making it approachable for home cooks.
