This soup starts by sweating onions, garlic, and bell pepper in butter, which softens the vegetables and releases their flavors. Cream cheese is incorporated next to thicken the base, followed by adding canned diced tomatoes with green chilies for mild spice and acidity. Chicken broth and whipping cream round out the liquid components, creating a creamy and savory soup.
The fajita seasoning packet provides characteristic Tex-Mex spices, but it may be substituted with taco seasoning. After simmering to meld flavors, cooked and shredded chicken is added to warm through. The soup's texture is smooth yet hearty from the chicken and vegetables.
It is typically served with toppings such as sour cream, shredded cheese, chopped cilantro, and avocado, which add richness and freshness. Using rotisserie chicken can save preparation time without sacrificing flavor.
Ingredients
- 1 lb chicken you can use rotisserie chicken to save time, boneless, cooked, shredded
- 1 onion diced
- 1 green bell pepper diced
- 4 garlic cloves, minced
- 1 tablespoon butter
- 6 oz cream cheese softened
- 20 oz diced tomatoes with green chilies I used 2 cans mild Rotel
- 2 1/2 cups chicken broth
- 1/2 cup whipping cream
- 1 packet fajita seasoning *you can use taco seasoning if preferred
- sour cream toppings of choice
- shredded cheese
- cilantro
- avocado
Instructions
- In a large pot, melt the butter over medium heat.
- Add in the onion, garlic, and green pepper and allow to simmer for about 3 minutes.
- Add the cream cheese to the pot and mash around a bit to incorporate.
- Pour in the diced tomatoes (and juice from can), chicken broth, whipping cream, and fajita seasoning. Stir to combine.
- Lower heat and simmer for about 20 minutes.
- Add in the cooked chicken and stir.
- Serve with toppings of choice. Enjoy!
Notes
- If you prefer, substitute 2-3 tablespoons of homemade or packet fajita seasoning instead of the included packet.
