Creamy Chicken Taco Soup with Cream Cheese
Description
This soup starts by sautéing diced onions in olive oil until softened, then combining diced tomatoes with green chiles, chicken broth, taco seasoning, and corn in the pot. Bringing this mixture to a boil concentrates flavors before softened cream cheese is stirred in to melt smoothly, creating a creamy base.
Cooked chicken breast is added and heated through, allowing flavors to meld. The soup's texture is both chunky and creamy with a mildly spicy and tangy flavor from the tomatoes and taco seasoning. It works well as a warming lunch or dinner.
Adding black beans is an optional variation to increase fiber and texture, but they are omitted here. Toppings such as avocado slices, shredded cheese, tortilla strips, and fresh cilantro are optional to customize the finished soup.
Ingredients
- 1 tablespoon olive oil
- 1 onion small, diced
- 10 ounces diced tomatoes with green chiles
- 3 cups chicken broth low sodium
- 1 taco seasoning packet
- 1 cup corn frozen
- 8 ounces cream cheese , softened and cubed
- 2 cups chicken breast , cooked and cubed or shredded

Instructions
- Heat a heavy bottom pot or dutch oven over medium heat with olive oil, then add the onion and sauté for 3-5 minutes, or until softened.
- Add the tomatoes (with juices, chicken broth, taco seasoning, and corn to the pot. Mix until combined. Then increase the heat to medium-high and bring to a boil.
- Add the cream cheese and reduce the heat to medium-low. Stir until cream cheese has melted into the soup.
- Add the chicken and cook for 5-6 minutes, stirring occasionally. When heated, serve.
