  • 1 ½ cups cheddar cheese sharp, finely grated
  • 1 ½ cups Monterey jack cheese finely grated
  • ¾ cup mayonnaise
  • cup jalapeño peppers diced, pickled
  • cup red pepper diced
  • ¼ cup scallions diced
  • 2 tablespoons cilantro chopped
  • 2 tablespoons lime juice freshly squeezed
  • salt kosher salt
  • black pepper kosher salt
  • tortilla chips for serving
  • chili lime seasoning for serving

Instructions

  1. Stir together the cheese, mayo, peppers, scallions, cilantro, lime juice and a big pinch of salt and pepper. Mix everything together until combined.
  2. Cover and refrigerate for 2 hours (or even overnight) before serving. This is great right out of the fridge but I like to let it come to room temperature for 15 minutes or so before serving.
  3. Serve with tortilla chips, crackers, pretzels or veggies. I sprinkle on some tajin or chili powder right before serving.
