Creamy Chilled Queso
Description
This chilled queso blends equal parts sharp cheddar and Monterey Jack cheeses, grated finely to create a smooth consistency when mixed. Mayonnaise acts as a creamy base binding the ingredients, while diced pickled jalapeño and red pepper add a mild spicy and sweet crunch. Scallions and fresh cilantro contribute herbal freshness.
Lime juice brightens the overall flavor, and kosher salt and black pepper season the dip to taste. The mixture is refrigerated for at least two hours to meld flavors, though it can be left overnight. Serving it slightly warmed to room temperature is optional for mellowing the chill.
This queso pairs well with tortilla chips, crackers, pretzels, or fresh vegetables. A final sprinkle of chili lime seasoning or tajin enhances the dip's subtle spiciness and citrus notes. The balance of creamy, spicy, and fresh elements makes it useful as a party appetizer or snack.
Ingredients
- 1 ½ cups cheddar cheese sharp, finely grated
- 1 ½ cups Monterey jack cheese finely grated
- ¾ cup mayonnaise
- ⅓ cup jalapeño peppers diced, pickled
- ⅓ cup red pepper diced
- ¼ cup scallions diced
- 2 tablespoons cilantro chopped
- 2 tablespoons lime juice freshly squeezed
- salt kosher salt
- black pepper kosher salt
- tortilla chips for serving
- chili lime seasoning for serving
Instructions
- Stir together the cheese, mayo, peppers, scallions, cilantro, lime juice and a big pinch of salt and pepper. Mix everything together until combined.
- Cover and refrigerate for 2 hours (or even overnight) before serving. This is great right out of the fridge but I like to let it come to room temperature for 15 minutes or so before serving.
- Serve with tortilla chips, crackers, pretzels or veggies. I sprinkle on some tajin or chili powder right before serving.
