Creamy chipotle sauce
Description
This sauce is made by pureeing plain yogurt—such as European style or Mexican crema—with one or two chipotle peppers that have had seeds removed to control spiciness. Garlic and freshly squeezed lime juice add brightness and depth, while salt adjusts seasoning. The mix is blended until smooth and creamy.
Right after blending, the sauce is somewhat liquid, but refrigeration thickens it to a preferred consistency. The smoky spice from the chipotle peppers balances the cool tang of yogurt, providing a flavorful complement to dishes needing a creamy kick.
Ingredients
- 1 cup PLAIN yogurt recommend European style yogurt, or Mexican crema (or crème fraiche)
- 1-2 chipotle peppers in adobo sauce seeds removed - adjust to taste based on desired level of spiciness, small
- 1 clove garlic
- lime juice of 1
- salt to taste
Instructions
- Combine all the ingredients in the blender or mini-food processor. Mix until you have smooth creamy sauce. Taste and adjust the spice level based on your preference.
- Use immediately or refrigerate until ready to use. The sauce will be very liquid right after making it, this is normal, refrigerate the sauce for it to thicken (if you prefer a thicker sauce).
