Creamy Chipotle Sauce (Vegan!)
Description
The Creamy Chipotle Sauce (Vegan!) combines plant-based yogurt or silken tofu with smoky chipotle pepper and adobo sauce, lime juice, and a hint of sweetness from maple syrup. Garlic and onion powder along with cumin provide depth, creating a well-rounded, spicy yet mellow sauce. Blending all ingredients until smooth results in a creamy texture that blends heat with tanginess, great for enhancing the flavor of various dishes.
This sauce is prepared quickly by opening and deseeding the chipotle pepper carefully, then blending all ingredients until smooth. Adjusting the number of chipotles and amount of adobo sauce controls the heat level.
Use this sauce as a topping or condiment with soups, salads, grilled vegetables, or vegan bowls. Its creamy consistency also makes it a good dip option.
The sauce stores well in the refrigerator for 4 to 5 days in an airtight container. The color may vary depending on the amount of chipotle pepper used. For less heat, omit the chipotle and add only adobo sauce; for spicier sauce, increase chipotle or adobo quantities.
Ingredients
- 1/2 cup vegan yogurt or 2/3 cup silken tofu, plain & unsweetened
- 1 chipotle in adobo sauce
- 1/2 tsp. adobo sauce
- 1 Tbsp. lime juice about 1/2 lime, fresh
- 1 tsp. apple cider vinegar
- 1 tsp. pure maple syrup
- 1/4 tsp. garlic powder (or 1 clove garlic)
- 1/4 tsp. onion powder
- 1/4 tsp. cumin ground
- 1/8 tsp. salt
Instructions
- Scrape away the seeds from inside the chipotle pepper with a knife. (Use caution when handling chipotles. I use a fork and a knife to maneuver them and avoid direct contact.)
- Add all ingredients to a small blender or food processor and blend for about 20 seconds or until smooth. Stop and scrape down the sides with a spatula if needed.
- Taste and adjust seasonings if desired.

- Handle chipotle peppers carefully; use utensils to avoid skin contact due to spiciness.
- Adjust spiciness by varying quantities of chipotle peppers and adobo sauce to suit your taste.
- Store the sauce in an airtight container and keep refrigerated for up to 5 days.
