Creamy Cilantro Lime Dressing

This creamy cilantro lime dressing blends fresh cilantro with Greek yogurt, olive oil, lime juice, honey, garlic, and salt. The ingredients combine into a smooth, bright, and slightly tangy dressing that's excellent for salads, tacos, rice bowls, or grilled meats. Letting it rest in the refrigerator allows the flavors to meld and intensify, making it more balanced and flavorful.

Description

Creamy Cilantro Lime Dressing features a blend of packed cilantro, plain Greek yogurt, olive oil, lime juice, honey, garlic cloves, and kosher salt. These ingredients are blended together until smooth, creating a creamy texture with fresh herbal notes and a hint of sweetness balanced by the lime's acidity. The garlic adds depth while the honey softens the tartness.

Serving this dressing chilled enhances its refreshing character, making it a versatile accompaniment to green salads, grilled proteins, tacos, or rice dishes. Its creamy consistency makes it suitable as a drizzle or dip.

Allowing the dressing to chill for at least one hour, preferably overnight, helps meld the flavors for a more harmonious taste. If the dressing is too thick, additional yogurt can be added to adjust consistency, ensuring pourability according to personal preference.

Ingredients

Servings
  • 2 cups cilantro packed
  • 1 cup yogurt plain, Greek
  • 6 tablespoons olive oil
  • 1/4 cup lime juice (about the juice of 2 limes)
  • 2 tablespoons honey
  • 2 cloves garlic
  • 3/4 teaspoon kosher salt plus more to taste

Instructions

  1. Add all ingredients to a blender or food processor.
  2. Blend until completely smooth, about 30 seconds.
  3. Taste and season with more salt, if necessary.
  4. Transfer to jar, cover and refrigerate for at least 1 hour, or preferably overnight, before serving to help the flavors really meld together. If you don't have time to let it sit, you can serve it immediately.
  5. Drizzle on salads, tacos, rice bowls or grilled meats!

Notes

  • Let the dressing chill in the refrigerator for at least 1 hour or overnight to blend flavors well.
  • Add more Greek yogurt if a thicker consistency is desired.
  • Include both cilantro stems and leaves, removing any excessively long stems for better texture.
