Creamy Coleslaw

Creamy Coleslaw blends shredded green and red cabbage, thinly sliced carrots, and chopped scallions with a dressing made from mayonnaise, apple cider vinegar, Dijon mustard, pure maple syrup, celery seed, salt, and black pepper. The dressing coats the crunchy vegetables, delivering a balanced creamy and tangy salad with subtle sweetness and spice notes. This coleslaw works well as a side dish or topping for sandwiches and barbecues.

Description

Creamy Coleslaw features a mixture of green and red cabbage shredded to provide crisp texture, combined with fresh carrot peels and scallions for added sharpness and color. The dressing is a creamy blend enhanced with the slight acidity of apple cider vinegar and the mild pungency of Dijon mustard. Maple syrup introduces a gentle sweetness that counterbalances the tang and the aromatic celery seed adds a unique note.

This coleslaw is tossed to evenly coat the vegetables, maintaining their freshness and crunch. It offers a balance of textures and flavors that complement grilled or roasted meats, sandwiches, or can stand alone as a light salad. The seasoning with salt and freshly ground black pepper can be adjusted to taste.
