Creamy Corn Dip

Creamy Corn Dip combines drained Southwest-style corn and Rotel tomatoes with green chilies, Greek yogurt, mayonnaise, shredded cheddar cheese, and ranch dressing mix for a cool, tangy, and mildly spicy dip. Green onions add freshness and the dip is served chilled with tortilla chips. The mix of textures includes tender corn kernels and a creamy base with sharp cheese bite.

Description

The Creamy Corn Dip recipe starts by mixing drained Southwest-style corn and Rotel tomatoes, which include green chilies, providing a flavorful vegetable base. Greek yogurt and mayonnaise blend to form a creamy, tangy sauce that balances with the sharpness of shredded cheddar cheese and the seasoning from ranch dressing mix. Chopped green onions add a mild onion freshness and color contrast.

This dip has a cool, creamy texture with bursts of corn and tomato combined with a mild heat from the chilies. The cheddar melts into the mixture, enriching the flavor. The dip is gently stirred to combine ingredients without crushing the corn, preserving texture.

Served chilled, it pairs well with corn tortilla chips for scooping. Garnishing with extra cheddar and green onions before serving adds visual appeal and fresh flavor.

For added spice, diced jalapeño can be incorporated. Garnishes like chopped cilantro and lime slices can add further brightness and color.
