Ingredients

Servings
  • 1 English cucumber
  • ½ pound pasta such as penne or rotini, medium size
  • ½ onion sweet white variety

Dressing

  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • 2 tablespoons dill chopped, fresh
  • 2 tablespoons white vinegar
  • black pepper to taste

Instructions

  1. Combine all dressing ingredients in a small bowl and mix well. Set aside.
  2. Thinly slice onion and place in a bowl of cold water. (see note)
  3. Cook pasta al dente according to package directions. Run under cold water to stop cooking.
  4. Cut cucumber in half lengthwise and remove seeds using a spoon. Slice into thin slices.
  5. Toss all ingredients in a large bowl. Let sit at least 40 minutes before serving.

Notes

  • Soaking the sliced onions in cold water reduces their sharpness for a milder flavor in the salad.
