Description
This salad features cooked medium-size pasta such as penne or rotini tossed with thinly sliced cucumber and sweet white onion. Ingredients
- 1 English cucumber
- ½ pound pasta such as penne or rotini, medium size
- ½ onion sweet white variety
Dressing
- ½ cup sour cream
- ½ cup mayonnaise
- 1 teaspoon granulated sugar
- ½ teaspoon salt
- 2 tablespoons dill chopped, fresh
- 2 tablespoons white vinegar
- black pepper to taste
Instructions
- Combine all dressing ingredients in a small bowl and mix well. Set aside.
- Thinly slice onion and place in a bowl of cold water. (see note)
- Cook pasta al dente according to package directions. Run under cold water to stop cooking.
- Cut cucumber in half lengthwise and remove seeds using a spoon. Slice into thin slices.
- Toss all ingredients in a large bowl. Let sit at least 40 minutes before serving.
Notes
- Soaking the sliced onions in cold water reduces their sharpness for a milder flavor in the salad.
