Description
This salad features Hothouse or English cucumbers, peeled or not based on preference, sliced very thin using a mandolin or peeler for even texture. These are tossed with thinly sliced red onion to add gentle sharpness. A dressing made from sour cream, garlic powder, red wine vinegar, kosher salt, fresh chopped dill, and sugar binds the ingredients, bringing creaminess and balanced acidity.
After mixing, the salad is chilled until serving, ensuring the flavors meld without losing the cucumbers’ crunch. It is best eaten the same day to maintain optimal freshness and texture. The dill and vinegar provide brightness that enhances the cooling effect of cucumber, making it a suitable accompaniment for grilled or spicy dishes during warmer seasons.
Ingredients
- 2 cucumber about 4 cups, Hothouse or English; peeled or unpeeled depending on preference
- 1/2 /2 cup red onion sliced thinly
- 1/2 /2 cup sour cream
- 1/2 /2 teaspoon garlic powder
- 2 Tablespoons red wine vinegar
- 1/2 /2 teaspoon kosher salt more to taste
- 1 tablespoon dill fresh, chopped finely
- 1 teaspoon sugar (use erythitol for Keto option)
Instructions
- Slice cucumbers very thinly using a mandolin, vegetable peeler, or knife. Add to a large bowl.
- Add the remaining ingredients to the bowl and stir to coat. Chill until serving. Best if served the same day.
