Creamy Cucumber Tomato Salad
Description
This salad features diced ripe tomatoes and English cucumbers combined with thinly sliced white onion and fresh herbs such as parsley, basil, and dill. The dressing is a blend of mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, and fresh chopped herbs, seasoned with seasoned salt and black pepper. When tossed together, the vegetables retain a crisp texture balanced by the creamy and tangy sauce.
The salad is best served chilled and can be eaten immediately or refrigerated for up to three days. Soaking the onions in cold water before mixing reduces their sharpness and bite.
Due to the high water content of cucumbers and tomatoes, the salad will release liquid if left to sit. Draining excess liquid before serving helps maintain texture and flavor. While this recipe originally used a specific ranch dressing brand, the homemade dressing is a straightforward substitute using common pantry ingredients.
Ingredients
- 3 large tomatoes ripe
- 1 English cucumber
- ½ white onion thinly sliced
- fresh herbs for garnish, parsley, basil and/or dill
Dressing
- ¼ cup mayonnaise
- 3 tablespoons sour cream
- 1 teaspoon apple cider vinegar
- ½ teaspoon granulated sugar
- ¼ teaspoon garlic powder
- ½ tablespoon dill chopped, fresh
- ½ teaspoon parsley chopped, fresh
- ½ teaspoon basil leaves fresh, thinly sliced
- ¼ teaspoon seasoned salt
- ¼ teaspoon black pepper
Instructions
- Combine all dressing ingredients in a small bowl. Mix well.
- Dice tomatoes and cucumbers into bite sized pieces.
- Add vegetables and dressing into a medium sized bowl.
- Toss well and season with salt & pepper to taste.
- Serve immediately or refrigerate up to 3 days.
Notes
- Soak sliced onions in cold water to mellow their sharpness before adding to the salad.
- Drain excess liquid before serving to prevent the salad from becoming watery.
- The salad can be refrigerated up to 3 days, maintaining freshness when stored properly.
- Homemade dressing replaces previously used bottled ranch dressing, providing a similar flavor with simple ingredients.
