Description

This fruit salad blends canned pineapple and mandarin oranges with chopped apple tossed in lemon juice to prevent browning.   • 10 ounce can pineapple chunks , drained
  • 11 ounce can mandarin orange drained
  • 1 medium apple , cored and chopped
  • 1 teaspoon lemon juice
  • 1 cup grapes , halved
  • 1/2 cup yogurt plain, Greek
  • 1/2 cup coconut shredded, sweetened
  • 1 cup mini marshmallows

Instructions

  1. Add apple to a large bowl and toss in lemon juice to keep from browning. 
  2. Add the pineapple, mandarin oranges, grapes, coconut, and marshmallows and toss to combine. 
  3. Stir in Greek yogurt, gently tossing to coat.
  4. Refrigerate for at least 4 hours prior to serving to allow the flavors to meld together. Serve chilled.

Notes

  • Use lemon juice tossed with apples to prevent browning and maintain color.
  • Allow the salad to chill at least four hours to meld flavors and improve texture.
  • If liquid pools in leftovers after a day, gently pour some off before serving to avoid sogginess.
