  • 1 kg (2lbs) mushrooms
  • 1 tbsp butter
  • 4 garlic crushed, cloves
  • oregano pinch
  • chilli flakes pinch
  • 1 cup cream
  • ½ cup Parmesan Cheese grated
  • 2 tbsp parsley
  • 1-2 tsp lemon juice
  • salt to taste
  • black pepper to taste

Instructions

  1. Clean the mushrooms by wiping them with a cloth.
  2. Mushrooms are like little sponges so washing them will mean they'll absorb a lot of water.
  3. Once the mushrooms are clean, melt the butter or add a splash of oil in a large pan set over medium-high heat.
  4. Add the mushrooms and allow to cook, stirring regularly, until golden brown. If a lot of liquid cooks out, allow to simmer until evaporated. 
  5. Add the garlic , oregano and chilli and cook for a minute then pour in the cream, lemon juice and Parmesan.
  6. Cook for 3-5 minutes until the sauce has thickened slightly.
  7. Season with salt and pepper and add the parsley then serve.
