Description
This recipe starts by cooking pasta in salted water until tender. Separately, butter is melted in a skillet and combined with coarsely chopped garlic and all-purpose flour, cooking briefly to create a fragrant roux. Heavy cream and chicken broth are added to form a creamy base that simmers until slightly thickened. The cooked pasta is drained but not rinsed to preserve starch, then combined with the sauce.
Shredded Parmesan cheese is stirred in to melt into the mixture, creating a smooth, cheesy coating. Salt and black pepper adjust the seasoning. Fresh chopped parsley can be added as a garnish to bring a bright herbal balance to the rich and garlicky pasta.
This dish can be served on its own or complemented with cooked proteins like chicken or shrimp for a fuller meal. Ensuring the sauce cooks in a skillet rather than a narrow saucepan helps achieve proper thickness. If needed, a cornstarch slurry may be used to adjust consistency. Ingredients
- 1 pound pasta such as penne, medium size
- ¼ cup butter
- 6 cloves garlic coarsely chopped, more or less to taste
- 1 ½ tablespoons all-purpose flour
- ⅔ cup heavy whipping cream
- ½ cup chicken broth
- 1 cup Parmesan Cheese shredded

Instructions
- Cook pasta in a large pot of salted water until tender.
- Meanwhile, melt butter over medium-low heat in a 10" skillet. Whisk in garlic and flour and cook until fragrant, about 30 seconds.
- Quickly add heavy cream and chicken broth. Simmer until heated and slightly thickened, 3-5 minutes.
- Drain pasta but do not rinse. Add to the cream mixture.
- Stir in parmesan cheese and season with salt & pepper to taste.
Notes
- Fresh garlic provides the best flavor, but 1 tsp garlic powder can be used if necessary, adjusting to taste.
- Use heavy or whipping cream to ensure the sauce thickens properly.
- Cook the sauce in a wide skillet for better thickening; a saucepan may need longer simmering or added thickener.
- Do not rinse the pasta after cooking to help the sauce cling better.
