  • 4 pork chops or boneless pork chops, bone-in
  • kosher salt to taste
  • black pepper to taste, freshly ground
  • 2 tablespoons extra-virgin olive oil
  • 8 oz baby bella mushroom sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan Cheese freshly grated
  • 1/2 teaspoon oregano dried
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes optional, crushed
  • 3 cups spinach packed, fresh baby

Instructions

  1. Place the pork chops on a cutting board, pat dry them with paper towels, and season with salt and pepper on both sides.
  2. Place a large skillet over medium heat, and heat the oil. Add pork chops and cook until golden brown and cooked through. Remove them to a plate, and cover them with foil to keep them warm.
  3. Next, add the sliced mushrooms to the skillet and cook stirring until softened about 5 minutes. Then add the minced garlic and cook until fragrant, about 1 minute.
  4. After that, add the heavy cream, Parmesan cheese, oregano, paprika, lemon zest, and a pinch of red pepper flakes, if using. Season with salt and pepper, to taste. Stir and bring the sauce to a simmer and cook until thickened, about 2-3 minutes.
  5. Finally, add the spinach and cook until wilted, stirring it into the sauce, about 2 minutes more.
  6. Return the pork chops to the skillet and cook until warmed through 5-7 minutes.
